A Ketogenic diet is a low-carb, high-fat diet that involves an adequate protein intake. This dish is KETO-friendly because it's low in carbohydrates and high in protein! Caribbean seasoned shrimp with creamy alfredo sauce makes keto exciting!
You'll Need:
500-1kg Jumbo Shrimp/Prawns
Zucchini Noodles or Low Carb Noodles/Pasta
1/2 lemon
To Season Shrimp:
1 tbs all purpose seasoning
2 tbs of jerk seasoning
Jerk Seasoning Recipe:
1 tbs cloves
1 tbs cinnamon
1 tsp nutmeg
1/2 scotch bonnet
1/2 tbs ginger
2 tbs brown sugar
1 tbs thyme (or 4 sprigs of thyme)
1 tbs sea salt
2 cloves of garlic
2 tbs rapeseed oil
3 spring onions
The Alfredo Sauce:
2 cups of double cream
1 1/2 cups grated cheese
1/2 tsp black pepper
1 clove of garlic diced
1 tbs butter
1 tsp paprika
1 tsp sea salt
1 tbs rapeseed oil
Additional:
2 spring onions diced
Half red, yellow, green bell peppers sliced
Method:
Creating your zoodles - using a spiralizer, use a whole zucchini for your portion. If your local supermarket does the pre packaged one, that will save you some time. Sautee the zoodles in a saucepan and put aside.
Wash your shrimp with fresh lemon juice, strain and set aside. To make the jerk seasoning, blend all the ingredients into a processor. You may need to add a bit more oil if your blender/processor does not produce a soft paste. Cover your shrimp with the seasoning and set aside.
For those using pasta, add your noodles/ pasta to boiled hot water in a saucepan (follow the boiling time on the pasta packet). A tip for stopping your pasta from sticking - add a tsp of oil to the boiled water before adding the pasta!
Add a tsp of oil into your saucepan, add each shrimp and cook the shrimp by turning over each shrimp every 3 minutes till you see the pale pink colour. Once cooked, remove the shrimp and set aside.
Some may want to wipe their saucepan clean but I prefer to leave the excess seasoning in the saucepan. Add butter to saucepan until melted, then add the cream. Next, add your choice of cheese, you will keep stirring. Add the paprika, black pepper and jerk seasoning - stir.
Add in your vegetables, shrimp & zoodles. Leave to simmer for 10 minutes.
Plate it up and its ready to eat!
