Do you find that restaurant Italian pasta dishes usually taste quite bland? Well I do! Try this recipe at home if you’re longing for a flavoursome Italian pasta ! Bucatini can be bought from Sainsburys (large ones), Holland & Barrett’s, Amazon or any organic grocery store (google your local fresh vegetable markets)
This recipe can also be used with linguine pasta!

Ingredients: - Full packet of Bucatini - Full packet of frozen or fresh Whole King Prawns (200g) - Red peppers x1 - Scotch bonnet or 2 Red chillies - Fresh parsley & coriander - Plum tomatoes in tin x2 (if fresh - 5 plum tomatoes) - 1 tbs Paprika - 1 tsp Brown sugar - 1 tbs Black pepper - 3 Garlic cloves - 1/2 Red onion finely diced - 1 tbs dried thyme & rosemary
Optional: add liquid magi when making the sauce Method: 1. Boil bucatini in hot water for 13 minutes. Add a pinch of sea salt and tsp of oil to remove freshness and to stop the pasta from sticking. 2. Add seasonings & herbs to the prawns in a non stick saucepan and cook for 7 minutes. Set aside 3. Sauce: Sauté garlic & onions with 1 tsp olive oil for 2 mins max. Add plum tomatoes and prawns and stir, allow to simmer for 7 minutes. Taste it - if it still tastes ‘fresh’ add some more paprika, black pepper and a tsp or brown sugar. Leave to simmer for 2 minutes 4. Drain pasta and add to sauce. Stir for 2 minutes on low heat. 5. Dress with chopped coriander & parsley - SERVE!
