Not your average chicken dish! Sweet, cheesy, smoky chicken!
You can make as many of these as you like! Just get a chicken fillet!
Cooking time: 25 minutes
1 Chicken fillet
2 tbs Rapeseed oil
1 tsp Dunns River chicken seasoning (if you dont have this combine salt, black pepper, cumin, cloves, mixed herb)
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
1 tsp cayenne
1 tsp brown sugar
Wash chicken fillet with lemon & cold water. Rinse and pat dry with a paper towel.
Preheat oven at 180 degrees (fan oven)
Carefully make an incision at the top of the fillet (the chunkiest part) using a sharp knife. Use your index finger to gently feel the approaching tip of the knife slightly.
Season chicken with seasonings above and set aside.
Slice the halloumi cheese(use 2 chunks) and cherry tomatoes (use 2 halves) and stuff into chicken.
Using a saucepan, turn on a medium heat and add oil. Brown chicken for 3 minutes on each side. Some tomatoes may fall out which is fine, gives it a little crisp!
Add stuffed chicken to an oven proof dish, cover with foil and put in oven for 15 minutes.
Remove from oven and slice up! Best paired with a pasta dish and salad.
