Halloumi & Tomato Stuffed Chicken

Not your average chicken dish! Sweet, cheesy, smoky chicken!

You can make as many of these as you like! Just get a chicken fillet!

Cooking time: 25 minutes


1 Chicken fillet

Halloumi cheese

Cherry tomatoes

2 tbs Rapeseed oil


1 tsp Dunns River chicken seasoning (if you dont have this combine salt, black pepper, cumin, cloves, mixed herb)

1 tsp black pepper

1 tsp garlic powder

1 tsp paprika

1 tsp cayenne

1 tsp brown sugar


  1. Wash chicken fillet with lemon & cold water. Rinse and pat dry with a paper towel.

  2. Preheat oven at 180 degrees (fan oven)

  3. Carefully make an incision at the top of the fillet (the chunkiest part) using a sharp knife. Use your index finger to gently feel the approaching tip of the knife slightly.

  4. Season chicken with seasonings above and set aside.

  5. Slice the halloumi cheese(use 2 chunks) and cherry tomatoes (use 2 halves) and stuff into chicken.

  6. Using a saucepan, turn on a medium heat and add oil. Brown chicken for 3 minutes on each side. Some tomatoes may fall out which is fine, gives it a little crisp!

  7. Add stuffed chicken to an oven proof dish, cover with foil and put in oven for 15 minutes.

  8. Remove from oven and slice up! Best paired with a pasta dish and salad.
