Heirloom Tomato, Avocado & Prawn Salad

A fresh salad, affordable and still impressive!

Ingredients:

- 400g Raw king prawns

- 1 Ready made salad bag

- 5 Romaine lettuce leaves (sliced)

- A handful of Heirloom tomatoes (halved)

- 1 Avocado (diced)

- Butter (2tbs)

- Coriander (for dressing)

- Lemon juice


Prawn seasoning:

1 tbs Mixed herbs

1 tbs All purpose seasoning

1 tsp Black pepper



Method:


  1. Add a 2 tbs of lemon juice to your raw king prawns and rinse with water then pat dry.

  2. Add butter to saucepan and allow to melt on medium heat. Add prawns and seasonings and cook till prawns turn pink (roughly 5 minutes).

  3. Prepare you salad with the remaining ingredients above and place in a beautiful sharing bowl.

  4. You'll notice that the prawns have created its own sauce/juice. Drain prawns and keep juice aside.

  5. Add prawns to salad and drizzle juice over the salad. Dress with fresh coriander. SERVE!
