Once you makes these deliciously stuffed meatballs, you'll never go back to ordinary meatballs ever again!!
You'll need:
400g Mince meat (can be beef, lamb or turkey)
Mozarella block or stick (diced)
Panko breadcrumbs (or blend 4 slices of bread)
Olive oil
Minced shallot
4 Cloves garlic
5 Mushrooms diced
1 Egg
Seasonings:
1 tbsOregano
1 tbs Paprika
1/2 tbs Black pepper
1 tsp Sea salt
1 tbs All purpose seasoning
1/2 tbs Brown sugar
Tomato sauce:
2 Plum tomatoes (alternatively use canned plum tomatoes)
& seasonings above
Method:
Wash and dice mushrooms, dice shallots and 2 cloves of garlic. Add the seasonings, mushroom, breadcrumb to the mince meat
Crack the egg into mixture and use your hands to create a soft mixture ready create mould your balls! You can add a tablespoon of milk to make it easier to mould if necessary
Dice the mozzarella into small cubes.
Once the balls are formed, poke a hole in each one with your finger, stuff with a piece of mozzarella, and re-form the meatball around it. Place in the fridge for 10 minutes to firm up
Add 2 tablespoons of oil to a saucepan, add meatballs ensuring that they do not touch. Turn over every 2 minutes until full brown
If you like a lumpy tomato sauce you wont need to do this step. Blitz the plum tomatoes in a blender till smooth.
Sauté garlic in a saucepan of small oil and add the tomato sauce and the repeat of seasoning. Simmer for 10 minutes.
Add meatballs to sauce and allow to cook for another 10 minutes.
Serve with brown spaghetti or a slice of sourdough - so yummy!
