An easy summer mediterranean-style dish with a twist! In the summer you either want to BBQ your food or make a quick dish! These delicious stuffed peppers take a total of 20 minutes including the quick prep!
1 pack of king prawns
3 sweet peppers
Shredded mozzarella cheese
1. Wash peppers and slice in half, de-seed peppers and for aesthetics leave the stalk on. lightly rub with oil and set aside on an piled down oven tray.
2. Add seasonings to prawns, stir to ensure fully coated.
3. Using a spoon, scoop out the prawns into the pepper, sprinkling on top as much mozzarella as you please! For the extra crunch, lightly sprinkle on top the breadcrumbs
4. Bake in the oven for 15 minutes, checking after 10 to ensure they are not burning!
